Pan con Tomate
This tasty tapa is inspired by the Spanish dish but with more garlic and tomatoes marinated in olive oil and basil.

Ingredients
- 1 French baguette
- 3 Roma tomatoes
- 8 fresh basil leaves
- Olive oil
- Salt
- Pepper
- Garlic confit
- Garlic oil (from making the garlic confit)
Equipment
- Oven, with broiler
- Refrigerator
- Bowl
Instructions
- In a bowl, toss the tomatoes in olive oil, basil, salt, and pepper. Let marinate in the fridge for at least an hour.
- Cut the baguette into 1/4 inch slices, at a 45-degree angle
- Brush both sides of each piece of bread in garlic oil
- Toast bread 3-4 minutes on both sides under a broiler
- Spread 1 garlic confit clove on each slice of bread
- Top each piece of bread with marinated tomatoes
- Enjoy!
